Black Bean and Turkey Chili (aka “Chocolate Chili”)

1 T canola oil

1 lb ground turkey

2- 15 oz cans black beans, drained

1-14.5 ounce can diced tomatoes with green chilis

1-28 ounce can crushed tomatoes

1 c onion, chopped

1 green bell pepper, diced

1 c frozen corn

2 garlic cloves, minced

1 tsp dried oregano

1 T chili powder

1 T unsweetened cocoa powder

1 tsp cumin

1 tsp chipotle pepper

1 tsp salt

1 ounce semi-sweet chocolate, cut into tiny pieces

In a large pot, heat the canola oil over medium heat.  Add the onion, garlic and bell pepper.  Cook about 3 minutes.

Add the turkey and salt and sauté 5 minutes or until no longer pink, breaking up the meat with a spoon as it cooks.

Add the beans, tomatoes, corn, oregano, cumin, chili and cocoa powders.

Bring to a boil.  Reduce heat, stir in chocolate and cover.

Simmer with the lid on for about 1 hour.
