Oven Roasted Herb Salmon

4-5oz salmon fillets (I usually I just do 2 6-8 oz fillets)

2 T Dijon mustard

2 T lemon juice

1 T olive oil

1 T fresh minced thyme

1 T fresh minced rosemary

1 tsp dried oregano

1/2 tsp salt

1/2 tsp pepper

1 small yellow onion, thinly sliced

2 tomatoes, thinly sliced

Make 3 to 4 1/4 inch deep slits along the top of each salmon fillet.

Combine mustard, lemon, oil, herbs, salt and pepper.

Coat the salmon on both sides.

Cover and refrigerate for 30-60 minutes.

Heat oven to 450 degrees.

Arrange tomato and onion slices in the bottom of a glass baking dish.

Microwave for 3-5 minutes (just cooks the onions a little).

Place salmon on top of onions and tomatoes.

Roast for 10-15 minutes, according to desired doneness.
