One Pot Shrimp, Black Beans, and Corn

2 tsp chili powder

¾ tsp garlic salt

¾ tsp ground cumin

1 lb medium shrimp, peeled and deveined

2 T lime juice, divided

1.5 c whole kernel corn, thawed frozen or canned

¾ c salsa (traditional or mango is good)

¼ c chopped fresh cilantro

1 15-oz can black beans, rinsed and drained

Combine chili powder, garlic salt and cumin.

Add shrimp and toss to coat well.

Return shrimp to refrigerator to marinate for 30 minutes to one hour.

Heat a large nonstick skillet over medium high heat.

Coat pan with cooking spray.

Add shrimp and sauté 3 minutes or until done.

Add 1 T lime juice.

Remove shrimp from pan.

Add corn to pan and sauté 1 minute.

Stir in salsa, cilantro and beans.

Cook about 30 seconds or until thoroughly heated.

Stir in 1 T lime juice.

Toss shrimp with bean mixture.
